Hmmm... Chocolat...
I love it, especially in winter when we want good food, comfort food. I made these chocolat truffles with my son the other day, for school. We thought it would make a nice gift for father's day, since the dad in our house is French and he LOVES chocolat. I'll head on over to our specialist deli to buy the best of the best in chocolat.... Valrhona.
Here is the recipe we used:
Ingredients and method:
250g plain (semisweet) chocolat
1 tablespoon fullfat milk
Melt these two ingredients in a bain-marie and stir to a very smooth consistency
Add 100g of butter (sorry, a substitute won't do) in small pieces and mix well
Blend together 2 large egg yolks and 50ml of fresh single cream. Add this mixture to the chocolate and mix well.
Finally add 125g of icing (confectioners') sugar and mix well.
Leave in the refrigerator for at least 6 hours before you start shaping the truffles.
Roll the chocolat paste into walnut-sized balls and roll in chopped nuts, chocolate vermicelli, cacao powder or icing sugar. I then put them in little paper cases and eventually in a pretty box for gifting.
